Well, as far as prayers go, I don't usually have a specific ending. Most of my prayers are pretty impromptu, if I'm feeling the need to contact the Goddess or God, or if I'm feeling really connected to them. So a lot of times, I just end it when I'm done saying what I need/want to say.
Spells, it seems a good idea to end with something like "So mote it be," just to solidify the feeling of completion in your mind, I guess. This is my opinion, but by saying that, you're really rounding things out, and determining that it WILL happen.
I think you can end the prayers with whatever you'd like. Maybe even just say "thank you" in one way or another to the Goddess and God for listening to your prayer.
I dunno, this is just my view, lol. I've always been of the belief that most prayers should be informal, because the goal is to have a real dialogue with the deities, rather than just saying a prescribed script.
