You don't choose them. They choose you. You can introduce yourself to them and let yourself and your intent to work with them be known, but only the Gods themselves can decide if they are going to work with you and accept your worship or not.
There are ways to choose which pantheons you want to focus on introducing yourself to though. The first suggestion I have is to read the myths and lore of the culture. Read all the myths in all forms you can find. The Gods who you have the strongest emotional reaction too will provide a good starting place as they are probably Gods that have something to teach you.
The next suggestion I have is to pray and give an offering to Gods of a few different pantheons and see who answers. Go with the pantheon you have the most emotional reactions and connections to as your focus, but be open to other pantheons. By praying openly that you are looking for the Gods you are meant to serve and work with you show them all that you are sincere. The offerings are your gesture of good will.
The third suggestion I have is after you read the mythology and pray is to meditate. Go into a meditative state and ask that the Gods make themselves known to you. Through your prayers and offerings you have sent them energy and love. You have opened yourself up. Now you need to be basically silent and wait for the answer.
These are ways you can find the Gods and Goddesses that want to work with you. You should also be open to the possibility of working with plant spirits, land spirits, animal spirits, and other spirit beings rather than just Gods. Not all paths work with Gods. Some paths work with different types of spirits. Those paths are just as valid. You use the same processes of prayer, lore reading, and meditation to contact spirits that you do for deities.

I agree with the above posters that you don't necessarily choose a God or Goddess, they choose you. However, don't let that stop you from looking!
Read up on mythology of various cultures and wait for something to "pull" at you. The first "pull" might not be the right one.I spent 6 months trying to create a close bond with various Norse Goddesses--all of whom were happy to accept my offerings and work with me to some extent, but none of whom I really felt a spark of special devotion to. Then I finally found Saga and everything clicked into place. I now work primarily with Her (though I still worship other gods periodically, for various reasons) and feel like I'm a personal devotee of hers.
The most important thing is not to rush it. Even if you feel drawn to a particular figure or pantheon, keep your eyes open.Eventually, if a God or Goddess wants to call you to worship them, they will make it known. Good luck!

Is there a particular culture you are more interested in working with than others (Norse, Celtic, Greek, Egyptian, Mesopotamian, Hindu, etc)? You may want to start there.Thanks a lot.

My advice then is to read a few different translations of the Poetic and Prose Eddas. Also look at the various sagas of the Norse as well. Even with the Norse you have Norse itself, you have the Anglo-Saxxons, and the other Germanic tribes.Okey.I started with Norse.

See you cant just look up the Gods of the mythology and expect them to jump out at you. You can also learn through the myths and lore all the different associations of the deities. You can see why they like what they like and why they don't like what they don't. In some cases you may even find and learn about prayers said to those Gods.Okey.I got it.Thank you.

You may also want to look into the Gods, myths and legends from your own cultural background. Sometimes it's easiest to connect with the gods when we can feel them through our own personal histories.

This is a good point. I started my path with a connection to the Greek Gods. Then a few years ago my ancestral lines started to ay no this is where you belong and so I started to research the Norse pagan paths.You may also want to look into the Gods, myths and legends from your own cultural background. Sometimes it's easiest to connect with the gods when we can feel them through our own personal histories.
