Moon & Sun
I've recently rededicated myself to Wicca & am debating selecting a pantheon. In the past I had never really been more specific than Mother Moon & Father Sun but the more I read here the more I wonder if I should be more specific going forward. What advice might any of you have to offer?

There are those who never get more specific, some just worship the Goddess and God, mother earth, or earth mother and sky father, or similar - like you mention doing. There's nothing wrong with this approach if it's working for you. I know one person who has almost created her own pantheon of sorts with these more archetypal figures of earth, sky, moon, mountains, and so on. She doesn't connect to personal deities or pantheons, but finds a lot of meaning in these other figures.
If you do decide to look into specific pantheons, something to keep in mind is that there are quite a few pantheons where the sun is seen as feminine, and the moon masculine, so that might limit your choices if you want to keep those particular views.

The only other thing I seem to find myself drawn to for some reason are Christian saints. Which is odd to me because I feel like the Christian faith tends to be very contradictory in its general workings which why I no longer follow it.

I used to follow the Christian faith myself, before I started researching Paganism. I've found through my research, that YHWH, the god that the Christians worship, is actually one of the gods from the Canaanite (I think?) pantheon, called Yaldabaoth. Coincidentally, he was their sun god, if I recall correctly. But he became blinded by arrogance, and thought himself to be the only truly worthy god in the universe, so he gathered followers and built a religion of his own which rejected all other gods, hence the monotheistic views of the Jewish and Christian faiths. At least, that's how I have interpreted my findings on the matter, feel free to do some research into that yourself if you're curious to know more 
As for whether or not you should be more specific; I'd say feel free to do whatever feels the most right to you, on a personal and spiritual level. If you prefer the way you practice now, nothing is to say you shouldn't do that - that's one of the great things about Wicca (and Paganism in general), the freedom of choice! If you are more interested in working with more specific deities, one thing you could try is calling out to the gods during meditation, and seeing who answers your call. You could end up finding there are some gods who would like to work with you, or you may not get a response straight away, and that's fine too.

Have you researched pantheon you feel close to? I have always had a soft spot for the Greek and Sumerian pantheons, they are the ones that call out to me the most. Try a prayer or meditation to ask deity to show themselves to you. They usually answer fairly quickly, but not always in a straightforward fashion. For example they could come in a dream, or there might be a repeated word, phrase or number associated with them, or someone might gift you something that represents them. It takes a bit of patience, but if you would really like to work with a specific deity, they will answer you.

I've thought of both Germanic & Celtic pantheons primarily because my mother's family was mostly German & my father's was Scottish-Irish. Although I did always enjoy learning about the Greek & Roman pantheons in school. I need to research them all a bit more. I will definitely be doing some meditation over this subject. Until (if ever) a specific deity or pantheon calls to or answers me I will continue to work with the more general Lord/Lady, Sun/Moon, God/Goddess etc.Have you researched pantheon you feel close to?
