Voodoo, or Vodou, is a particular religion. It comes mainly from West African religious beliefs, but Catholicism was mixed into it quite a bit, originally to hide old beliefs into religions slaves were being forced into.

Hoodoo is not a religion, but a system of American folk magic which came strongly out of West African folk magic, but mixed with some European and Native American folk beliefs as well. While it is not a religion, there is also heavy protestant influence in a lot of hoodoo work, where spells include psalms or other Bible passages.
